I would strongly suggest you simply keep all those updates, unless you know exactly what you're doing. Deleting the wrong thing or a system file could crash your system, so it's best to just leave things as is.
The most important IE updates would be the security ones, so you could pass on version upgrades, say IE6 to IE7.
With the updates to Windows, you really only need to do the critical updates and not the options ones unless you want to. The critical ones are listed with the Express option on the update page.

there's no way those updates are going to use up all of your disk space. in case you don't know: 1024 bytes = 1 kilobyte, 1024 kilobytes = 1 megabyte, 1024 megabytes = 1 gigabyte.|||Do not delete them. If you want to clean up your disk do a disk cleanup and disk defrag.
